Roasted Sweet Potato with Cinnamon Honey

Cinnamon Honey Roasted Sweet Potatoes/Yams

 

Ingredients:

  • 3 lb Sweet potatoes or yams (cubed)
  • 1/4 cup Butter
  • 1/4 cup Cinnamon Honey
  • Salt to taste

How to Make It:

  • Preheat oven to 350 degrees. Spread a thin layer of butter in a 9" x 13" baking pan to prevent sticking.
  • In a small mixing bowl whisk together melted butter, Cinnamon Honey and salt.
  • Place sweet potatoes/yams in baking dish, pour Cinnamon Honey and butter mixture over top and toss well to evenly coat.
  • Spread into an even layer (they will overlap) and bake in preheated oven until soft, tossing every 15 - 20 minutes.  Bake for 50 - 55 min total.
  • There will be some Cinnamon Honey and Butter mixture left at the bottom of the pan after baking.  Use this mixture to pour over the Sweet Potatoes/Yams and toss to make sure they are evenly coated.
  • Serve warm.

Cinnamon Honey Granola

How to Make It

Step 1    

Preheat oven to 300°. In a cup, whisk the walnut oil with the honey. In a bowl, combine the oats, pecans, cinnamon and salt. Add the oil and honey to the oats and stir to coat.

Step 2    

Spread out the oat mixture on a large rimmed baking sheet. Bake for 30 minutes, until the granola is crisp and lightly browned, stirring every 10 minutes. Let the granola cool completely before serving.

The granola can be kept in an airtight container for up to 2 weeks.

 

 

Fried Cinnamon Honey Bananas

Ingredients 

  • Cook­ing Spray
  • 1 tablespoon cinnamon honey
  • 1 banana
  • 1/4 teaspoon cinnamon

Directions

  1. Cut the Banana into slices
  2. Mix together the cinnamon honey and 1/2 tbsp water (set aside)
  3. Spray the frying pan with cooking spray, medium heat
  4. Brown the Banana slices in the pan (1-2 minutes then flip)
  5. Once the other side is browned add the "honey water" mixture, it'll bubble for a minute.
  6. Top with cinnamon and enjoy!

 

 

Cinnamon Honey Snack Mix

Ingredients

 

  • 2 Cups Mixed Nuts
  • 2 Cups Pretzels
  • 2 Cups Chex Cereal
  • 2 Cups Wheat Chex Cereal
  • 2 Cups Dried Cranberries
  • 1 1/2 Cup Pepitas
  • 4 Tablespoons Coconut Oil, Melted
  • 2 Tablespoons Ground Cinnamon
  • 1/4 Cup Honey
  • 1/2 Teaspoon Sea Salt
  • 1 Cup Chopped Dark Chocolate
  •  

    Directions

     

    1. Add mixed nuts to the bowl.
    2. Add pretzels
    3. Add Chex and wheat Chex
    4. Preheat oven to 350 degrees.
    5. Add dried cranberries
    6. Add Pepitas (Pumpkin seeds)
    7. Microwave coconut oil until it becomes a liquid.
    8. Pour the honey into the coconut oil and mix well.
    9. Gradually stir in the ground cinnamon.
    10. Pour the honey cinnamon sauce over the snack mix.
    11. Spread the mix onto a baking sheet and drizzle honey over the top. Sprinkle the sea salt evenly over the top.
    12. Bake for18-22 minutes.
    13. Spread the baked mix out onto a sheet of parchment paper and allow it to cool for 30-45 minutes.
    14. Break the pieces of dark chocolate up.
    15. Add the dark chocolate to the cooled snack mix. Make sure you do not do this when the mix is warm because the chocolate will melt.
    16. Store in plastic bags or mason jars!
    17. Enjoy!

     

    Cinnamon Honey Baked Apples

     

    INGREDIENTS

    • 2 cooking apples
    • 2 tablespoons raisins
    • 1 tablespoon cinnamon honey
    • 1 teaspoon butter
    • 1 tablespoon Walnuts (optional)

    DIRECTIONS

    1. Core the apples and pare a 1-inch strip of skin from around the middle of each to prevent splitting.
    2. Place the apples in two 10-oz custard cups.
    3. Pack the raisins into the apples.
    4. Pour the cinnamon honey over the raisins and into the apples.
    5. Top with butter.
    6. Cover tightly and microwave on high (100%) until tender when pierced with a fork, 3 to 4 minutes. If you prefer, they can also be baked at 375°F for 30 minutes.
    7. Serve warm with ice cream, if desired.
